Hey If anyone wants to post recipes here Chikadee and I will give them a try and maybe include them in the recipe database that I have started. we are always looking for good tasting healthy recipes.

This isn't much of a recipe, but it's delicious. I made this up recipe trying to emulate Chipotle's rice:

Cilantro Lime Rice

Cooked white rice*
Cilantro paste or stock base (about a tablespoon per cup of UNCOOKED rice)
Lime juice (about a teaspoon per cup of uncooked rice - more if you like the tartness)
fresh cilantro (to taste)

* I soak and rinse - until the water runs clear -  my rice before I cook it when i make this recipe. It makes the rice much less sticky, because the white stuff you wash off is all starch (which gets gloppy when you cook it). I also usually add butter and vegetable bouillon to the rice while cooking.

Cilantro paste is something I found by accident at a Mexican supermarket. You might be able to find it elsewhere; the stuff I use is made by Goya, and Kroger carries some Goya products.
